Sometimes you just need a quick and easy snack or breakfast on the go. Sometimes you need a little pick me up after a workout. Sometimes you want something for dessert but you’re trying to be a little healthier. These energy bites fit the bill! You just can’t eat them all right when you make them.
They are super easy to make. And super easy to eat! Just pop them in your mouth.
To make – you just mix up all the ingredients in a bowl until it reaches a good consistency.
Once it’s to the good consistency, you refrigerate for 30 minutes so it will firm up a bit. And then you just roll them into balls. Done.
Also – there are numerous variations that you can do to change it up. You can change your peanut butter from creamy to crunchy. I’ve been using Peter Pan recently, but I’ve also used Maranatha natural. If you use the natural, you will need to store your energy bites in the refrigerator because the natural peanut butter is not as firm and you’ll have something that looks more like a blob than a ball.
You can change the chocolate chips to white chocolate chips. You can leave them out if you want. You can add cranberries to the mix. You could add shredded coconut. If you want some extra protein, add a little bit of vanilla protein powder to the mix. Instead of the honey, you could use Agave nectar. You get the point. The change-ups and possibilities are endless. You just need to make sure you have the right consistency. If it’s too thick, add a little more peanut butter and honey. If it’s too runny, add some more oats.

- 1 1/4 cups rolled oats
- 1/2 cup chocolate chips
- 2 - 3 tbsp. flax seeds
- 1/2 cup peanut butter
- 1/3 scant cup honey
- 1 tsp vanilla
Ingredients

- Mix together all ingredients until blended.
- Let sit in refrigerator for 30 minutes.
- Roll into 1 inch balls.
- Can keep at room temperature or in refrigerator for longer shelf life.
