It’s fall and of course, pumpkin is all the thing right now. Some people love pumpkin and some people despise it. Can you guess which camp I’m in? I’m one who loves it. Although I will say I’m not a fan of a pumpkin spice latte. I love lattes, but I’ve never been able to get into the pumpkin spice latte. I don’t know why. But add pumpkin spice to baked goods or even other drinks (like milkshakes) and I’m good.
Today, I’m sharing a super simple pumpkin bread recipe.
I found this recipe online but it called for sooo much sugar that I just couldn’t do that much. I have found that pumpkin and sweet potato recipes usually call for too much sugar (in my opinion). Both pumpkin and sweet potato already have a little sweetness to them, and I don’t want the sugar to overpower them. So I reduced the sugar in the recipe (but it’s still a lot) and added a brown sugar crumble on top. Although I just thought to myself, how ironic is it that I reduced the sugar inside the bread but added more on top? Hmmm….oh well. Of course, you don’t have to add the crumble. The bread itself is wonderful. But the brown sugar crumble gives it a nice crunch and adds a little oomph to the bread.

- 1 can pumpkin
- 2 1/4 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 2/3 cup water
- 3 1/2 cups flour
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 1/2 tsp pumpkin pie spice
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/2 cup flour
Ingredients

- Preheat oven to 350. Grease and flour 3 loaf pans.
- Mix the pumpkin, sugar, eggs, oil, and water until well blended.
- In another bowl, mix the flour, baking soda, salt, and pumpkin pie spice together.
- Add the flour mixture in batches to the pumpkin mix until well blended.
- Pour batter evenly into loaf pans
- Melt butter.
- Add brown sugar and flour until combined and crumbly.
- Sprinkle on top of bread before baking.
- Bake for approximately 1 hour or until toothpick comes out clean.
