Here’s a fun, easy, and festive recipe to make for Memorial Day! The kids will love it, and so will the kid in you.
I’ve made “normal” rice krispie treats before. And to be honest, I always thought it was a pain melting the butter and marshmallows on the stove and then adding all the cereal. I really disliked stirring it. I think it was the amount of marshmallows and rice krispies. This recipe is way easier because you only melt a small amount of butter and marshmallows in the microwave! Then you add the rice krispies. You do it in smaller batches because you have to color each batch of rice krispies the color that you want it.
I originally made rainbow-colored rice krispie treats last year. I love bright, colorful things so when I saw a recipe on Pinterest for rainbow rice krispie treats, I knew that I had to make it. It was so simple and the kids loved to help.
When I made the rainbow rice krispie treats, we used the colors of the rainbow and the order of the colors. Does anybody else use the acronym ROYGBIV for remembering the order of the rainbow colors? I do. Now, I know that we only have 6 colors in our rice krispy treats (and the red and orange bleed together), but I think purple counts for indigo and violet. At least that’s my story. I’ve seen recipes where they stack the colors on top of each other, and it looks really pretty. We obviously didn’t do it that way, but it still looked like a rainbow. And guess what? It still tasted delish too!
But onto this recipe, my kids wanted to make rainbow rice krispie treats again for a road trip. It was almost Memorial Day, so I asked if they wanted to make them red, white, and blue to be more festive for the holiday. They did, but my son took it one step further and suggested making an American flag. We colored a third of the rice krispies red, another third blue, and we left the remaining rice krispies plain.
Then we shaped it into a flag in our pan. Our flag isn’t a complete American flag because we only have 6 colony stripes (instead of 13) and 9 stars (instead of 50). - 4 1/2 tablespoons butter divided, melted
- 6 cups mini marshmallows divided
- 6 cups crisp rice cereal divided
- food coloring red and blue
Ingredients

- Grease 9 x 13 dish with melted butter or spray with non-stick spray.
- Melt 1 1/2 tablespoons butter with 2 cups of mini marshmallows in a bowl in the microwave for approximately 30 seconds. Take out, stir, and heat for 10 more seconds. Remove from microwave and then add blue food coloring to the color of your liking.
- Add 1 cup of rice krispies. Stir. Add the remaining 1 cup of rice krispies. Stir until completely coated with colored marshmallow mixture.
- Repeat one time, adding red food coloring. Repeat a second time, leaving plain (white).
- Press rice krispies into pan. Press the blue rice krispies into a square in the corner. Add red stripes and white stripes. Add small bits of white rice krispies to the blue for the stars.
