Poke cake. To me, that sounds like a terrible name. But what else can you name a cake that you poke holes in? And if it’s really good, does the name really matter?
We’ve had poke cake for years and years. I remember my mom making it in the summer. She probably made it in the summer because it’s the perfect cake for summer because it’s refreshing and cold. And it’s simple so it doesn’t require a lot of work when you’d rather be outside doing fun summer activities!
My daughter loves poke cake and she requests it for her birthday every year. Her birthday is the first day of fall so we’re definitely moving out of summer at that time, but when it’s your birthday, you can pick the cake you want. She has recently taken a liking to baking cakes. She made one all by herself a couple weeks ago which was fabulous. Because she loves poke cake, she was pretty excited to help make this patriotic poke cake.
We usually use raspberry jello when making our regular poke cakes. Why? Because I like raspberry best. And that’s what my daughter likes. And with a regular poke cake, you can use any ol’ jello that you like. Strawberry, cherry, lime, orange, black cherry, berry blue, lemon …. You get the picture!
For our festive Fourth of July cake we of course needed red, white, and blue. The cake’s white. The raspberry jello is the red. (You could use another red jello). And we added in berry blue jello for the blue. So easy and so good. I added some blueberries and strawberries on top.
Final note – I’m a whipped cream snob. I like freshly whipped cream. We once had a catastrophe on Christmas because my mom only had cool whip at the house for the pumpkin pie. What?!! I was a teensy bit disappointed. Well, maybe a lot. We may still talk about every Christmas. And we may have freshly whipped cream every Christmas now. BUT, I use cool whip on jello poke cakes. Cool whip and jello just go together. And it’s easier.

- 1 box white cake mix plus ingredients to make the cake (eggs, oil, water)
- 1 3 oz. package raspberry jello
- 1 3 oz. package berry blue jello
- 1 container Cool Whip
- strawberries, blueberries optional
- 1 cup boiling water
- 1 1/2 cups cold water

- Prepare cake mix as directed on the box and bake as directed. Let cake cool for about 15 minutes.
- While cake is cooling, bring 1 cup of water to boiling. Empty jello mixes into separate bowls. Add 1/2 cup of boiling water to each jello. Stir until jello is dissolved. Add 3/4 cup of cold water to each jello. Stir.
- Poke holes all over cake with wooden skewer. Gently pour the jello, in alternating lines, across the top of the cake. (You'll have a little left over-make jello with it!) Refrigerate for several hours.
- Top with cool whip. Serve and enjoy!
